INGREDIENTES:
700g de leche
300g de caldo de pollo o jamón
200g de jamón serrano/ibérico en taquitos
110g de harina
50g de mantequilla
2 huevos cocidos
Pan rallado
Aceite de oliva
Huevo batido
Elaboración
1- En una sartén con un poco de mantequilla sofreímos el jamón.
2- Añadimos la harina, subimos la intensidad del fuego y removemos durante 8 minutos.
3- Añadimos el caldo de pollo o de jamón y movemos bien, y acto seguido añadimos a leche poco a poco para deshacer los grumos.
4- Dejamos cocina a fuego medio durante 25 minutos removiendo constantemente y añadimos un huevo duro bien picado.
5- Pintamos una fuente con aceite, añadimos la masa de las croquetas y pintamos por encima con un poco de mantequilla.
6- Metemos la masa en la nevera hasta que se solidifique, y posteriormente hacemos croquetas con la masas.
7- Cada croqueta la bañamos con huevo y con pan rallado, y la metemos a enfriar al frigorífico antes de freír.
8- Freímos las croquetas a fuego fuerte en abundante aceite.
